In 1999 Chris and Sally Harvey[Sally Beresford] purchased the property Mirrabooka one of the earliest developed dairy farms in the Southern Highlands and part of the original Throsby grant of land in close proximity to Moss Vale.
The property sits on the North facing slopes of Mount Ashby and was specifically selected for the growing of cool climate grapes and for its similarity in climate and topography to parts of the Burgundy region.
Merlot and Pinot Gris were selected as the most appropriate varieties and were put together with the most suitable root stock to achieve maximum growth and development in the early years. A small planting of chardonnay followed.
The property still supports dairy cattle [Holsteins] as well as having one of the largest private plantations of Gingkyo in Australia.
The Cellar Door wa opened in 2006 and offers our complete range of wines which includes a spectacular botrytis pinot gris and our petit rouge a light red summer wine blended from merlot and pinot gris complemented by cheese produced from locally sourced milk.
The Cellar Door (02 4869 4792) is located in the renovated dairy and is part of a complex of historic buildings consisting of the old Bowral Produce Store which was relocated to the property in 2002 and the historic Clydsdale stables.
The architecture is a blend of French provincial and early Australia and is in sympathy with our involvement in the importation and restoration of French Antique furniture of which examples will always be on view in the cellar door.
